Chocolate Muffins


Ingredients

  • 1 cup fresh raspberries
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Directions
1.Mash raspberries in a bowl, mixing in honey, chia seeds, and vanilla extract. Allow to thicken for 15 minutes.
2.Drop spoonfuls of the mixture onto a parchment-lined baking sheet and freeze for 30 minutes.
3.Melt chocolate chips with coconut oil in the microwave, stirring every 30 seconds until smooth.
4.Dip frozen raspberry drops into the melted chocolate, coating evenly, and place back on the parchment-lined sheet.
5.Freeze for another 15 minutes until the chocolate sets.
6.Enjoy immediately or store in an airtight container in the freezer for up to 2 weeks.
