Blueberry Lattice Pies
Delicate mini pies with a buttery crust and a juicy blueberry filling, topped with a charming lattice design. Perfect for individual servings!
✔ Ingredients
• 2 1/2 cups (310 g) all-purpose flour
• 1 cup (225 g) unsalted butter, chilled and diced
• 1/4 cup (50 g) granulated sugar
• 1/4 tsp salt
• 5 tbsp (75 ml) ice water
• 2 cups (300 g) fresh or frozen blueberries
• 1/2 cup (100 g) granulated sugar (for filling)
• 2 tbsp (15 g) cornstarch
• 1 tbsp (15 ml) lemon juice
• 1/4 tsp cinnamon
• Egg wash (1 egg mixed with 1 tbsp water)
• Powdered sugar (for dusting)
✔ Directions
1.Combine flour, sugar, and salt in a bowl. Cut in butter until the mixture resembles coarse crumbs.
2.Add ice water gradually, mixing until dough forms. Wrap and refrigerate for 30 minutes.
3.Mix blueberries, sugar, cornstarch, lemon juice, and cinnamon in a bowl. Set aside.
4.Roll out the dough on a floured surface. Cut circles to fit mini pie molds and additional strips for lattice.
5.Fill each mold with the blueberry mixture. Top with lattice strips, pressing edges to seal.
6.Brush lattice with egg wash. Bake at 375°F (190°C) for 25-30 minutes or until golden.
7.Cool slightly, dust with powdered sugar, and serve.
