Tuscan Salmon
“Perfectly seared salmon fillets simmered in a rich, garlicky cream sauce with cherry tomatoes and spinach. A restaurant-quality dish made at home!”
✔ Ingredients:
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- Fresh parsley, chopped (for garnish)
✔ Directions:
1.Season salmon fillets with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the salmon for 4-5 minutes per side until golden and cooked through. Remove from skillet and set aside.
2.In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
3.Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
4.Stir in heavy cream, chicken broth, Parmesan cheese, and Italian seasoning. Simmer for 3-4 minutes until the sauce thickens slightly.
5.Add spinach to the skillet and cook until wilted, about 1 minute. Return the salmon fillets to the skillet and spoon the sauce over them. Simmer for an additional 2 minutes.
6.Garnish with fresh parsley and serve hot with crusty bread, rice, or pasta.
