Chocolate Muffins
These double chocolate muffins are rich, moist, and packed with chocolate chips in every bite. Perfect for breakfast, dessert, or anytime chocolate cravings strike.
✔ Ingredients
• 1 3/4 cups (220 g) all-purpose flour
• 1/2 cup (50 g) cocoa powder
• 1 cup (200 g) granulated sugar
• 2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 2 large eggs
• 1 cup (240 ml) buttermilk
• 1/2 cup (120 ml) vegetable oil
• 1 tsp vanilla extract
• 1 cup (175 g) chocolate chips, plus extra for topping
✔ Directions
1.Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
2.In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
3.In another bowl, beat eggs, buttermilk, oil, and vanilla extract until combined.
4.Gradually mix the wet ingredients into the dry ingredients until just combined.
5.Fold in the chocolate chips gently.
6.Divide the batter evenly among the muffin cups, filling each about 3/4 full.
7.Sprinkle extra chocolate chips on top of each muffin.
8.Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
9.Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
